Step 1: Prepare the cake tin in advance.
Grease or line the round cake tin.
Preheat the oven to moderate (180ºC/350ºF). -
Step 2: Pour boiling water over the apricots in a sturdy bowl.
Allow to soak for 10 minutes, or until softened. , The mixture should turn pale in colour. ,, Stir well. ,,,, Put the cake in the oven and bake for 50 minutes or until the cake is ready when a skewer poked in it comes out clean. ,, In a heavy-based saucepan, combine the sugar and water.
Stir over low heat until the sugar dissolves.
Bring to the boil and then simmer for approximately 2 minutes.
Remove from the heat and add the rosewater.
