Place all the ingredients except the salmon in a pan and pour in the water and wine. -

Bring to a boil over a moderate heat and simmer gently for about 40 minutes. , Carefully slide the salmon into the stock and gently cook for 5 minutes.
Remove from the heat and leave the salmon in the hot stock for a further 4-5 minutes. , When the salmon is cooked, serve onto a plate or bowl.
