Step 1: Peel sweet potatoes
A small sharp non-serrated knife, preferably without a pointy point (to protect the user), is a good option.
The skin is thin and the potatoes are hard, so take a narrow strip at a time to avoid jamming the knife and also to avoid wasting potato.
Sweet potatoes are not very easy to peel safely so generally don't let a child do this. , Set them on the baking dish.
Ideally they will form a single layer, closely packed, an inch thick side by side.
Overlap them if you have to., The temperature doesn't really mater so long as it is well above 212 degrees, the boiling point of water--whatever temperature you're baking something else at should be fine.,, Re-cover and bake for 30 minutes or so more., The problem is that marshmallows are just fluffed sugar and corn syrup, which tend to de-foam like soap bubbles and turn into still-tasty but not-so-interesting syrup when heated through., The hot sweet potatoes will soften them sufficiently from underneath to give them a somewhat soft appealing texture.,, -
