Step 1: Scald the milk over medium high heat.
Pour it into a large bowl or the bowl of an electric mixer and add the butter.
Stir the butter into the milk and set the bowl aside until the mix is lukewarm. -
Step 2: Stir the yeast & sugar into the milk.
Allow to sit for at least 3 minutes.
Add one cup of the flour (125g) and mix well, using a spoon or an electric mixer.
Add the eggs, one at a time, beating well after each addition.
Add the salt and another cup of flour, and mix until the dough is elastic and smooth (3-6 minutes). , Turn it out onto a floured surface and knead it until it is smooth (2-3 minutes).
If you are using an electric mixer, add the 2 1/2 cups flour and mix until just incorporated, then turn the dough out and continue as above. , Butter the inside of the bowl.Roll the dough into a ball, rub it with a bit of butter to keep it soft and put it in the buttered bowl.
Cover with saran wrap and set it in a warm place (about 68-72 degrees Fahrenheit) until it has doubled in size, about 2 hours. ,, Remember to flour your rolling pin!
