Step-by-Step Guide

  1. Step 1: Take 2 cups of yoghurt and beat with a whisk until smooth.

    Add 1 cup of water and add to a heavy bottomed pan.

    Let it come to a boil stirring constantly.

    Once boiling reduce the heat and let it cook until it has thickened and reduce to half.

    You will have to whisk occasionally.
  2. Step 2: Wash and lotus root and then slice in 1 inch (2.5 cm) pieces diagonally.

    The root usually has some mud in it so be sure to wash it out really well. ,, Set aside.,,,,,,
  3. Step 3: Pressure cook the the pieces for about 10 minutes.

  4. Step 4: Fry one onion until gold brown and blend to make a paste.

  5. Step 5: In a heavy bottom pan

  6. Step 6: add 2 tsp of ghee

  7. Step 7: 2 tsp ginger powder

  8. Step 8: 2 tsp fennel powder

  9. Step 9: 4 whole black cardamon

  12. Step 12: 4 pieces of cinnamon

  14. Step 14: Add the cooked yoghurt and let it simmer for about 10 minutes

  16. Step 16: Cook for about 30 -40 mins until the gravy has thickened.

  17. Step 17: Add crushed dry mint and black jeera.

  18. Step 18: Remove from heat and serve with rice
