Step 1: Melt the chocolate as required by the recipe or chocolate package instructions.

The temperature should be 28ºC/82ºF. , Mix well until the combined chocolate reaches a temperature of 34ºC/93ºF evenly.
You'll then need to work very quickly with the chocolate. , While working with it, keep it at this temperature.
This can be done by keeping the bowl in a warm spot or occasionally giving the bowl a blast of heat with a hair dryer set on low. -
