  1. Step 1: Prepare the dumpling wrappers.

    In a large bowl add in tapioca starch, rice flour, xanthan gum, olive oil, and water.

    Use your hands to combine all of these ingredients until the consistency is just right.

    Cover with a plate or damp cloth and let it sit for an hour. , Separate the dough from earlier into equal sized balls with your hands.

    Flatten the balls of dough with a rolling pin or by squishing it with your hands.

    Rub some rice flour on your hands if the dough is too sticky., Mix together ginger, onion, shiitake mushrooms, cabbage, carrot, white pepper, dry sherry, soy sauce, sugar, and salt to taste in a bowl until well combined.

    Heat up a skillet with some oil to prevent your skillet from ruining (olive oil, coconut oil, sesame oil, avocado oil etc all work fine).

    Place the vegetables onto the pan and begin to cook until the vegetables turn tender.

    Wait until the vegetables cool down a bit so you can work with it to make the dumplings., Scoop about one tablespoon of the filling in the middle of the dough make sure not to use too much or too little.

    Wet the edges of the dough with water then fol the dough over.

    Use a fork to secure your dumplings.

    Repeat until all the dough is gone., Fill a large pot with water and bring to a boil.

    Place the dumplings gently into the water when the water starts to bubble and cook for 3o minutes., In a small bowl mix gluten free soy sauce, sesame oil, and rice wine vinegar.
