Step 1: Mix the chickpea flour and ghee together.
Mix into a soft dough. , Keep it ready, as the mixture will be poured onto this for setting.,, Cook, stirring constantly, until it caramelizes. (Caramel forms when the sugar melts in the water and forms a thick solution.), Mix the dough and caramelized sugar syrup over the heat or flame.
Stir continuously while cooking, and add the remaining ghee to the mixture.
The mixture will be ready once the ghee starts oozing out on the sides., Keep it aside for 30 minutes, to set.
If wished, sprinkle crystal sugar on the mixture once the dish has been poured to set.
This will give the dish a nice appearance. , Squares, diamonds or triangles are some easy shapes to cut it into.
Cut into the desired shapes within 2 to 3 minutes of pouring the mixture onto the plate, to ensure ease of cutting. -
