Step 1: Make the paste.
In a blender, coarsely blend onions, tamarind, garam masala powder, chili powder, coriander powder, cumin powder and ginger-garlic paste.
Remove the paste from the blender and set aside. -
Step 2: Cut the eggplants into quarters.
One cut lengthwise, one cut width wise.
If they are small enough, you can just cut them in half. , Don't expect to use all of the paste, there should be some left over. ,,,, Spoon some of the mixture over them, until they are well coated. , The curry should not be liquid, it should be semi-dry. , It takes about 15 minutes depending on the size of the eggplant pieces.
